Risotto doesn't always have to be the star of a dinner menu, it can also serve as a great bed for another dish which it does in episode 106 of POV Italian Cooking where I make a simple Beef Tomato Risotto. This risotto serves as the bed upon which Beef Osso Buco will rest in the next episode (#107).
This is a great recipe for delicious walnuts wrapped in lovely sticky ricecake.
How to make Ricecakes (4 pieces), Glutinous rice, Potato starch, Granulated sugar, Firm tofu, Water, How to make Walnut paste (for 2 pieces), Roasted walnuts (180C for 10-12 minutes), Brown sugar, Mirin, Soy sauce, Dried apricot, How to make Walnut & Bean paste (for 2 pieces), Roasted walnuts , Azuki bean paste, Crushed walnuts, Vegetable oil for frying
Cooked rice, Sardines in Oil (tin), Spring onions, Potato starch or cornflour, Vegetable oil for frying, Mayonnaise, Cayenne pepper, Lemon wedges, Seasonings, Soy sauce, Grated ginger, Sake or white wine
Simmered in a tomato sauce, this delicious dish will fill you up but it's still refreshing.

Sushi rice, Nori sheet (1/2), Salad lettuce leaves, Ready salted crisps, Fish fingers (frozen), Cucumber (1cm square, as long as the nori sheet), Mayonnaise
A general rule: half a nori sheet, 80g sushi rice placed with a 2cm gap across the top; the cucumber should be 1cm square long strips - then it should work out fine (probably).
