Roast Chicken Rice Ball (Onigirazu) With Teriyaki Sauce

Use any leftover roast chicken or shop bought. I'm going to make a quick microwave teriyaki sauce.

Ingredients

Cooked rice 1 bowl
Nori sheet 1
Roast chicken as required
Lettuce as required
Teriyaki sauce recipe
Soy sauce 2.5 tbsp
Mirin 2 tbsp
Sake 2 tbsp
Sugar 1 tsp
Cornstarch 1 tsp

Method

Here are the ingredients. Use a soft round lettuce. I used ready sliced cooked chicken.

Mix all the ingredients for teriyaki sauce and microwave for 1 minute until it boils.

Place the nori sheet on a piece of cling film in a diamond shape. Put half the cooked rice in the centre in a square shape.

Top with the lettuce then the teriyaki sauce-coated chicken pieces (you can drizzle the sauce if you like).

Cover with the lettuce leaves and then with the remaining rice. Make a nice solid square shape.

Fold in the four corners of the nori sheet to meet in the centre.

Wrap with the cling film all round and press firmly. Leave for 10 minutes.

Slice into two triangles or halves with a wet knife. My main picture shows it cut in half squarely to fit into a lunchbox, in front is the teriyaki sauce and mayonnaise only at the back.
