The genuine Portuguese recipe uses dried salted cod but it's hard to find here in the UK so I added salt onto a cod fillet and sauteed it - it's not bad at all!

When I made the Portuguese Meringue Cheesecake called Morotov, I was inspired to make this ultra fluffy version. But, it was not a cake, it just stopped at a meringue. If I'd made a bit more effort, it would have been wonderful - help please!
Blend the mackerel to make an instant pate. Delicious when spread on toast. Traditional pates use butter but this time I used cream cheese which makes it much milder.
