Egg Tart (Pastel de Nata)

A Portuguese traditional sweet.

Ingredients

Puff pastry sheet 320g
Milk 250ml
Vanilla pod 5cm
Granulated sugar 3 tbsp + 3 tbsp
Flour 1 tbsp
Egg yolk 1
Egg 1
Lemon zest 1

Method

These are the eggs I used. Preheat the oven 200C.

Put the milk, vanilla pod and granulated sugar into a small pan and heat on medium. Warm until it boils, turn off the heat and allow the sugar to dissolve.

Put the egg yolk, egg and granulated sugar into a bowl,.

Add the flour and some cornflour and mix well. Add the warm milk from Step 3 bit by bit and stir well. Remove the vanilla pod.

Return the mix to the pan on a medium heat. Turn off the heat as it thickens and whisk well. Add the lemon zest.

Prepare a muffin tray. Cut out the puff pastry into 8cm rounds and press into the muffin tray, pricking with a fork.

Add the custard from Step 6 and put into the oven for 20 minutes.

Tips & Note

Stir the custard well. You can use vanilla paste (1/4 tsp) instead of the vanilla pod, if you wish.
Your custard will look lovely with a yellow finish, so I recommend to use Clarence Court Burford Brown eggs.
