Dragon Sushi Roll

A bit tricky to make and the avocado could go brown or collapse, but it's so worth it!

Ingredients

Sushi rice 200g
Salad leaves a few
Tuna (tinned, in oil) 2 tbsp
Mayonnaise 1 tsp
Cucumber (1cm square strips) 2
Avocado 1
Nori sheet 1

Method

Put some cling film over a bamboo mat.

Place half the nori sheet on the cling film. Take 100g sushi rice and spread out covering all the nori sheet (leave 1cm free across the top).

Turn over the nori and rice. Place the ingredients in a line just under the centre line.

Roll up, using the bamboo mat so the sushi roll is covered in the cling film.

Cut the avocado into half and remove the stone. Peel it. Place on a chopping board. Slice the avocado finely using the top end of the knife.

Put the sliced avocado on your hand, cover with your other hand and press slightly to stretch out. Do this until it reaches the length of the nori sheet.

Remove the cling film and lay the avocado slices across the top of the sushi roll.

Put the cling film back on and wrap in the bamboo mat to help firm up the roll by pressing on it. Remove the bamboo mat and cut the roll into 6 pieces (with the cling film on) using a wet knife.

Tips & Note

Slice the avocado neatly and thinly to achieve a good effect.
