Light and Fluffy Tofu Blancmange

Ingredients

Tofu 100g
Condensed milk 3 tbsp
Gelatine sheets 2
Hot water 100ml
Syrup:
Dark brown sugar 2 tbsp
Water 3 tbsp

Method

Soak the gelatine in cold water in a bowl for 5 minutes.

When it's soft, squeeze and put into hot water to dissolve.

Crush the tofu through a sieve and mix with the condensed milk in a bowl. Add the dissolved gelatine and mix well. Pour into a dish to cool it.

Put in the fridge for one hour to chill.

In the meantime, make the syrup.

Put the brown sugar and water in a heat proof bowl and microwave for 1-2 minutes. Watch it doesn't boil over.

Scoop some blancmange from Step 4 into a serving bowl and pour over the syrup.

Tips & Note

●If you use dark muscovado sugar, this will give it an excellent deep flavour
