Harissa-marinated Chicken with Preserved Lemons

Ingredients

Chicken wings 8
Harissa paste 3 tbsp
Olive oil 2 tbsp
Salt 1 tsp
Salt & pepper a little
Preserved lemon 1
Coriander leaves 10g

Method

Here are the ingredients.

Put the harissa paste, olive oil and salt in a bowl and mix well. Chop the chicken wings and season with salt & pepper and add to the bowl.

Keep aside for one hour in the fridge.

Preheat the oven 200C.

Put the chicken in an oven tray for 15 minutes. Turn the wings and roast for a further 10 minutes until nice and golden.

Finely chop the preserved lemon and coriander and scatter over the chicken.

Tips & Note

Rub the chicken with the marinade by hand to really coat it well.
