Individual 3 Cheese Square Pies

This has 3 different fillings to enjoy.

Ingredients

Puff pastry 1 pack (500g)
Beaten egg as required
【Basil pesto & Mozzarella Cheese】
Basil pesto (ready made) 1-2 tsp/pie
Sundried tomato paste (ready made) 1-2 tsp/pie
Mozzarella cheese (2cm diced) 120g
Salt & pepper as required
【Spinach & Ricotta Cheese】
Spinach 1 pack
Ricotta cheese 120g
Grated Parmigiano reggiano 2 tbsp
Salt & pepper as required
【Chicken, Ham & Mascarpone】
Chicken (ready cooked) 100g
Ham slices 2
Mascarpone 3-4 tbsp
Gruyere cheese (grated) 2-3 tbsp
Salt & pepper as required

Method

Mix together all the 3 filling ingredients into 3 separate bowls.

Cut the puff pastry into half and roll out 3-5 mm thick from the centre outwards.

Cut to 15cm square pieces (you should get 6 squares).

Brush with the beaten egg along all four edges. Place the fillings into the centre.

Pinch each corner with your fingers and bring up to the middle. Pinch all 4 corners together at the top to create a parcel.

Brush with the beaten egg on top.

Put into a preheated oven 190c (Gas mark 5) and bake for 15-20 minutes before serving.

Tips & Note

●You can cook raw chicken beforehand using celery, carrots and onion to give a good flavour.
●At Step 4, don't overfill the pie as you won't be able to seal it completely.
