Korean Style Somen Noodles

This is so clean and tasty and perfect when you don't have that much of an appetite.

Ingredients

Somen noodles bunch 2
Noodle broth (mentsuyu) 300ml
Spring onions (finely chopped) 2
Nori sheet (finely shredded) 1/2
Crushed sesame seeds 1 tbsp
Chilli flakes 1/2-1 tsp
Soy sauce 1-2 tsp
Sesame oil 1 tbsp

Method

Here are the ingredients. The somen noodles should be cooked as per the packet instructions.

Put all the other ingredients (except the noodle broth) in a bowl and mix well to make a tasty topping.

Heat the noodle broth in a pan if you like - you can keep it cold. I made my own noodle broth but you can use shop bought.

Wash the somen noodles under running water and drain well. Transfer to a serving bowl and pour over the noodle broth. Top with Step 2 and serve.

Tips & Note

Use your favourite noodle broth or soup base. You can add some Gochujang into the topping sauce if you like, to get even more of an authentic flavour.
