Savoury Portobello Mushrooms on Rice

Ingredients

Portobello mushrooms 4
Butter 3-4 tbsp
Garlic 1 clove
Parsley 2 tbsp
Salt & pepper as required
Soy sauce as required
Pickled plums (umeboshi) 1-2
Sesame seeds 2 tbsp
Spring onion greens 2
Cooked rice for 4 people

Method

Finely chop the garlic, parsley, spring onions and pickled plums but keep them separate.

Put the room temperature butter in a bowl with the garlic, parsley and salt and mix well.

Remove the stalks from the mushrooms and fill the hollows with the herb butter from Step 2.

Put onto a baking tray for 10 minutes in a preheated oven at Gas mark 7-8.

Put the chopped pickled plums, spring onions and sesame seeds into the cooked rice and mix.

Transfer Step 5 onto serving plates and top with the mushrooms cut to bitesize pieces. Drizzle with some soy sauce if you like.
