Aloo Gobi (Potato and Cauliflower Curry)

Ingredients

Onion 1
Tinned tomatoes 1/2
Cauliflower 1/2
Potatoes 1-2
Mustard seeds 1 flat tsp
Cumin seeds 1 heaped tsp
Coriander seeds 1 heaped tsp
Fennel seeds 1 heaped tsp
Garam masala 1 heaped tsp
Crushed chilli 1 flat tsp
Garlic 1 clove
Ginger 1 thumb
Salt as required
Vegetable oil as required

Method

Slice the onions and cut the cauliflower into florets. Finely slice the garlic and ginger. Dice the potato quite small.

Put the vegetable oil in a pan and fry the onions until brown. Add the mustard seeds and stir fry.

Add the cumin, coriander, fennel, garam masala, chilli, garlic and ginger. Stir well.

Add the cauliflower and potatoes to Step 3.

Pour in the tinned tomatoes and add enough water to cover the potatoes. Bring to the boil.

Turn the heat down to low and continue to cook until the potatoes are soft.
