Courgette Curry

Ingredients

Courgettes 3
Minced beef 500g
Onion (large) 1
Ginger 20g
Garlic 1 clove
Vegetable oil 1 tbsp
Tomato ketchup 2 tbsp
Worcester sauce 1 tsp
Soy sauce 2 tsp
Salt & pepper as required
[Spices]
Curry powder 2 tbsp
Garam masala 1 tbsp
Cumin seeds 2 tsp
Coriander powder 1 tsp

Method

Trim the courgettes and slice into 1cm rounds. Finely chop the onion, ginger and garlic.

On a medium heat, fry the ginger and garlic in a frying pan. When you can smell the garlic, add the minced beef and stir fry.

Add the onions and when softened, add the courgettes and fry further.

Add all the spices and stir fry for 2-3 minutes. Add 200ml water, ketchup, Worcester sauce and soy sauce.

Simmer for 10 minutes then season with salt & pepper.

Serve with cooked rice or cous cous.

Tips & Note

●If you can't get all the spices, that's still OK. You can just use curry powder and garam masala.
●You can serve with boiled egg or cherry tomatoes to brighten up the dish.
