Smoked Haddock & Spring Vegetables Sushi

The smoked haddock really intensifies the flavour.

Ingredients

Sushi rice 300g
Smoked haddock 100g
Stem broccoli 60g
Asparagus 100g
Broad beans or edamame 30g
Pickled ginger (gari) 20g
Crushed sesame seeds 1 tbsp
Nori sheet (finely chopped) a little
【Omelette strips】
Egg 1
Sugar 1 tsp
Sake 1 tsp
Salt a little

Method

Make the omelette strips first: mix the egg, sugar, sake and salt together in a bowl. Fry 2-3 thin omelettes in a frying pan. Cut into fine strips when cold.

Wrap the haddock in cling film and microwave for 90 seconds. Remove the skin and flake the fish.

Cut the stem broccoli to 3-4cm lengths. Slice the asparagus diagonally into 3cm lengths.

Put some salt in boiling water and boil the vegetables but keep them firm. Drain and pat dry.

Finely chop the pickled ginger and add this, broad beans, the vegetables, haddock and sesame seeds into the sushi rice. Transfer to a serving bowl.

Sprinkle the omelette strips over the top with the nori crumb.
