Tasty Seasoned Grated Carrots

Perfect with rice.

Ingredients

Carrots 250g
Tinned salmon 1 (100g)
Dried shiitake mushrooms 2-3
Spring onions 3
Egg 1
Liquid from the rehydrated mushrooms 100ml
Sake 1 tbsp
Miso 1 tbsp
Salt 1/4 tsp
Soy sauce 1/2 tbsp
Sugar 1/2 tbsp
Mirin 1 tbsp

Method

Rehydrate the dried mushrooms. Finely chop the mushrooms and carrots. Roughly chop the spring onions.

Put some vegetable oil in a pan and stir fry the mushrooms and carrots. Add the drained salmon.

Once it's cooked, add the liquid from rehydrating the mushrooms and the seasonings. Cook for 10 minutes until the liquid has evaporated.

Add the spring onions and finally the egg. Stir well until the egg is cooked.
