Celeriac & Butternut Squash Salad

Ingredients

Celeriac 1/2 (300g)
Lemon 1/2
Butternut squash 1/4 (200g)
Olive oil 1 tbsp
Pancetta 40g
Extra virgin olive oil 2 tbsp
Balsamic vinegar 2 tsp
Salt & pepper as required

Method

Preheat the oven 200C.

Thickly peel the celeriac and cut to 1cm thick. Soak in water with the lemon juice to prevent discolouration.

Peel and deseed the butternut squash and cut to 1cm pieces.

Put some baking paper on an oven tray and add the celeriac and squash.

Drizzle with the olive oil and rub in thoroughly.

Put in the oven for 10 minutes. Turn them over and put back in the oven for another 10 minutes.

Put the diced pancetta in a small pan on low heat. Fry until crispy then transfer to kitchen paper to remove excess oil.

Arrange some salad leaves on a serving dish and add the grilled vegetables. Scatter with the pancetta, pour over the balsamic vinegar, extra virgin olive oil and season with salt & pepper.

Tips & Note

Use a particularly good quality balsamic vinegar. You could use turnips, mooli, pumpkin or sweet potatoes instead of celeriac and butternut squash if you like.
