Roasted Parsnips in Golden Syrup

A side dish with a lot of healthy fibre.

Ingredients

Parsnips 2 (200g)
Unsalted butter 1 tbsp
Golden syrup or maple syrup 1 tbsp
Walnuts as required

Method

1
Peel the parsnips and cut in half, then into 4 batons.

Put the parsnips in a bowl and microwave for 1 minute. Add the butter and mix.

Put a baking sheet on an oven tray and spread out the parsnips evenly.

Drizzle with lots of golden syrup and bake at 220C for 20 minutes.

Place onto a serving dish and cover with dry roasted chopped walnuts.
