Soya Milk Vegetable Potage

A very nutritious soup using leftover vegetables and soya milk.

Ingredients

Onion 100g
Carrot 100g
Tomato 80g
Parsnip 1
Red pepper 1
Stock cube 1
Water 200ml
Soya milk 200ml
Butter 20g

Method

Cut the onion in half and slice to 1cm thick. Roughly chop the parsnip, carrot and red pepper. Cut the tomato into wedges.

Put the butter in a pan and add all the vegetables on medium heat.

Add the crumbled stock cube in water and bring to the boil then turn the heat down to low. Simmer until the vegetables are cooked.

Blend Step 3 to make it smooth and return to the pan and add the soya milk and turn up the heat to just before it boils. Transfer to a bowl and garnish with your favourite herbs if you like.

Tips & Note

●You can use potato instead of parsnips
●Remove the tomato skins if you want a really smooth soup
