A light and airy carrot cake, with lots of carrots and a good orange flavour.

Ingredients

Organic orange zest 1個
Organic carrots 2 medium length (150g)
Plain flour 125g
Baking powder 1 tsp
Light brown cane sugar 100g
Egg 2 medium
Olive oil 120ml
Granulated sugar 3 tbsp
Walnuts 50g
Grand Marnier 大さじ1
(Icing)
Icing sugar 70g
Water 1 tbsp
Grand Marnier 1 tsp
Organic orange zest 1/2 orange

Method

Preheat the oven 180C.

Grate the orange part of the orange zest and the washed carrots, skin included.

Sift the flour, baking powder and brown sugar into a bowl.

Separate the egg yolk and white. Put the yolk into a small bowl, and the white into a large bowl to whisk.

Mix the egg yolk and slowly pour in olive oil, whisking gradually to make it smooth.

Add the sugar in 2-3 separate batches into the egg whites and whisk until it reaches firm peaks.

Chop the walnuts into small pieces.

Pour the egg yolk and olive oil mixture into the flour mixture. Add the meringue, Grand Marnier. carrots and walnuts.

Pour into a baking tin and put into the oven for 35-40 minutes. Once cool enough, remove from the tin and leave on a rack to cool completely.

Making the icing: put the icing sugar, water and Grand Marnier in a small bowl and mix together to a ribbon consistency.

Drizzle the icing over the cooled cake and grate orange zest to decorate.

Tips & Note

Make the meringue quite stiff but be sure to fold it gently. It's quite hard to mix in the egg yolk and olive oil into the flour mixture to start with but it will become easier.
If possible, use organic carrots and orange zest.
