How to Make Sushi Rice

For one 'gou' rice (150g uncooked rice), you need 30ml (2 tbsp) sushi vinegar, this is the standard ratio.

Cook the rice as usual. Pour over the sushi vinegar while it's still hot. Lightly separate the rice grains. If you're right-handed, put all the rice on the right side of the bowl.

Move one bowlful of rice to the left side and mix by cutting through it. Move it a little to one side.

Repeat Step 2 until all the rice on the right has been mixed by cutting.

Turn the bowl 180 degrees to the rice is again on your right.

Repeat Steps 2-4 three times. Turn the rice over inside the bowl and spread to cover the base of the bowl. Fan it to cool it down.

When cooled, cover with a wet cloth to stop it drying out. Keep for 15 minutes before using.

Tips & Note

※I used ready to buy sushi vinegar. It can also be used in salad dressings, it's very useful because it contains sugar, dashi and vinegar. Keep one in your cupboard.
