Bacon & Swede Pasta

Enjoy the wonderful crunchy texture of the swede.

Ingredients

Swede 300g
Bacon 100g
Garlic 1 clove
Olive oil 2 tbsp
Salt & pepper a little
Balsamic vinegar 1/2 tsp
Pasta (linguine) 160g
Finely chopped parsley a little

Method

Wrap the swede in cling film and microwave for 3 minutes. Remove the cling film, allow to cool then cut into strips.

Cook the pasta in lots of water.

Put the oil in a frying pan and add the smashed garlic. Remove it when the aroma arises.

Add the chopped bacon and fry on a low heat until crispy.

3-4 minutes before the pasta is ready, add the cooked swede into Step 4 and stir fry.

Drain the pasta and add to Step 5 and mix well.

Sprinkle the vinegar, season with salt and garnish with finely chopped parsley.
