You get a lovely aroma of grilled cauliflower and the fennel. If you roast the garlic, it will be even better.

Serves 4 Prep: 30 min Cook: 15 min

Ingredients

Cauliflower (small) 1
Fennel 1
Garlic 1 clove
Cherry tomatoes or baby plum tomatoes 10
Baby spinach 50g
Salt a little
Extra virgin olive oil 1 tbsp
A Capers in vinegar 2 tbsp
A Wholegrain mustard 1 tbsp
A White vinegar 2 tbsp
A Sea salt 1/2 tsp
A Extra virgin olive oil 4 tbsp

Method

1
Here are the main vegetables.
2
These are the dressing ingredients for A.
3
Pull apart the cauliflower into florets. Chop the fennel into half lengthways and remove the core. Slice to 5mm wide pieces.
4
Place some parchment or baking sheet onto an oven tray. Put the cauliflower, fennel and pressed garlic on the tray and drizzle over some olive oil.
5
Grill for 10-12 minutes until light brown or 15 minutes in an oven 220C.
6
Make the dressing. Roughly chop the capers and mix with all the other ingredients for A in a bowl and mix well.
7
Add the grilled cauliflower, fennel and garlic into Step 6 and mix well while still hot.
8
Add the half cherry tomatoes and spinach into Step 7, mix well and put onto a serving dish.

Tips & Note

Grilling takes a bit longer than boiling the cauliflower, but it tastes so much better. Instead of fennel, you could use celery and rocket instead of spinach.

Osso Buco, which translates as “hole of bone” is pure meaty awesomeness. Placing on a bed of risotto or polenta pays tribute to Osso Buco’s roots and takes this Italian comfort food to another level. Traditionally, Osso Buco is made with veal but see how I make Beef Osso Buco, a carnivorous wreath.

Risotto doesn't always have to be the star of a dinner menu, it can also serve as a great bed for another dish which it does in episode 106 of POV Italian Cooking where I make a simple Beef Tomato Risotto. It can be difficult to make a perfect hard-boiled egg that has a creamy yolk and a tender white. Overcooking a hard-boiled egg, which is easy to do, results in a chalky and sometimes greenish yolk, a rubbery egg white and a slightly sulfuric taste. In this video I demonstrate how I use my sous vide to get the perfect hard-boiled egg.
