Cucumber & Tomato Salad with Goat's Cheese

Ingredients

Cucumber 1/2
Tomato (medium) 1
Onion 1/2
Olive oil 2 tbsp
Vinegar 2 tbsp
Lemon juice 1 tbsp
Lime juice 1 tbsp
Sugar 1 tsp
Goat's cheese as you like

Method

Dice the cucumber, tomato and onion.

Mix the olive oil, vinegar, lemon & lime juice and sugar together in a large bowl. Add the vegetables from Step 1 and mix. Keep in the fridge for 30 minutes, then top with the goat's cheese before serving.

Tips & Note

Vinegar by itself gives a very sharp flavour, so mellow it slightly by combining with the citrus juices and sugar. You could swap the goat's cheese for Stilton or feta if you prefer.
