Oven Dried Tomatoes in a Rich Caprese Salad

Mozzarella caprese is delicious but a bit watery. Put tomatoes in an oven to make them semi 'sundried' and you'll have a tastier (and not so wet) caprese!

Ingredients

Tomatoes 1 pack
Mozzarella cheese 2
Salt a little
Olive oil as you like
Balsamic vinegar as you like

Method

Cut the tomatoes into half and put on an oven tray. Sprinkle with salt then put in an oven 120C for 1-2 hours.

Once the moisture has evaporated and the tomatoes have shrunk, they're ready. Allow to cool then roughly chop.

Cut the mozzarella into dice and mix with the other ingredients and the chopped tomatoes, it's ready to serve.

Tips & Note

The drying time for the tomatoes will depend on the size of tomatoes, the oven strength and where you put the tray in the oven, so check periodically. Semi dried tomatoes are delicious as a starter or in a pasta dish or with roasted fish or meat - very versatile.
