Blue Cheese on Tomato Pasta

Ingredients

Pasta for 1
Danish Blue cheese 1/6 pack
Tomato puree 1 heaped tbsp
Rocket small handful

Method

Cook the pasta. Break up the cheese with a fork. Wash the rocket in hot water and roughly chop.

When the pasta is ready, mix in the tomato puree and sprinkle the cheese and rocket on top.

Tips & Note

I love blue cheese - I used the popular and reasonably priced Danish Blue. It's the most sour one, so suitable in lots of dishes. Personally, the Irish Cashel Blue also works well with pasta.
