Mushroom Peperoncino Spaghetti

Make a basic mushroom sauce peperoncino style (olive oil, garlic & chilli) first of all, then mix with butter and cheese and the pasta - mmmm, delicious!

Ingredients

Mushrooms (medium) 10-12
Olive oil 5-6 tbsp
Garlic 2 cloves
Dried chilli 1
Butter 10-15g
Parmigiano reggiano (grated) 2 tbsp
Parsley as you like
Spaghetti 200g

Method

Cook the pasta first. Add 1-1.5% salt to water (for 2 litres water, add 20-30g salt).

Put the olive oil and smashed garlic cloves in a frying pan, then put the heat on medium.

The garlic is only there to transfer its flavour to the oil, so heat it gently and don't burn it.

When the garlic begins to brown, remove and put in the dried chilli. Again, this is only to transfer the flavour to the oil.

Remove the chilli and add the mushrooms sliced to 5mm.

Fry on high heat for 5 minutes. Keep frying with 2 pinches of salt to reduce the water that's released.

Just before the pasta is cooked, put the butter in another frying pan and add 1.5 ladles of pasta water.

Add in the pasta, mushrooms and cheese. Mix to combine well.

Add the parsley and mix again. Transfer to a serving dish.

Tips & Note

●Pasta has no salt so it relies on the pasta water for its seasoning, so make sure you follow the ratio above.
●The Parmigiano reggiano is key to adding flavour, so use the real thing and grate it (not the powder).
