Tuna & Vegetable Simple Rice Salad

Ingredients

Cooked rice 200g
Cheddar cheese 50g
Gherkins (large) 2
Tinned tuna 1/2
Tomato (small) 1
Broccoli 1/4
Basil leaves 3-4
Cress as required
Chicory as required
Dressing:
Gherkin vinegar 1 tbsp
Lemon juice 1 tsp
Capers (in oil) 2 tsp
Olive oil 1 tbsp
Salt & pepper as required

Method

Roughly chop the gherkins. Cut the cheese into 1cm dice. Deseed the tomato then dice. Finely chop the capers.

Flake the tuna. Lightly boil the broccoli and cut to small florets. Shred the cress and basil.

Make the dressing: put all the ingredients into a bowl and mix.

Add the dressing to the warmed cooked rice and mix in. Add Steps 1 & 2 and mix again.

The cheese will melt so add it in just before serving.

Serve the salad on chicory leaves if you like.

Tips & Note

●You can add asparagus or peppers or anchovies... you decide!
●You can use risotto rice or basmati, whatever you have left over
