Snow White Chicken Broth on Rice (Oyakodon)

I made an egg white souffle on top of a traditional oyakodon, it looks amazing.

Ingredients

Eggs 2
Chicken thigh 1 (180g)
Onion (small) 1
Carrot 1/3
Mushroom 1
Green beans 5-6
Noodle broth (mentsuyu) 3 tbsp
White wine 2 tbsp
Water 12 tbsp

Method

Here are the ingredients. Thinly slice or chop all the vegetables. Cut the chicken into bitesize pieces.

Put the noodle broth and water in a pan and add all the vegetables and chicken. Bring to the boil.

I used this noodle broth which is kombu dashi concentrate. Add lots of water to thin it down or it will be quite strong.

Add the wine and allow the alcohol to evaporate. Keep one egg for adding to the pan and separate the other egg into white and yolk. Whisk the egg white to soft peaks.

The chicken will be cooked in 3-4 minutes. Beat the egg and egg yolk together and pour over the chicken in the pan. Place the egg white mixture on top and cook for 1 minute.

Transfer on top of some cooked rice in a bowl.

Tips & Note

To make a meringue, just blend for 30 seconds to get soft peaks.
