Stir Fried Choy Sum and Egg in Hot Sauce

A healthy side dish using crunchy choy sum.

Ingredients

Egg 1
Choy sum bunch 1
Vegetable oil 1 tbsp
Sesame oil 1 tbsp
Salt a pinch
Chinese chilli bean sauce (Tobanjan) 1 tbsp
Soy sauce 1 tbsp
Rice wine (sake) 1 tbsp
Sugar 1 tsp
Sesame seeds as required

Method

Cut the choy sum into 5cm lengths. Beat the egg and add the salt. Put the vegetable oil in a frying pan and heat on high.

Pour in the beaten egg and stir for 10 seconds, then remove to a plate. Make sure the pan is really hot to avoid the egg becoming greasy.

Put the sesame oil into the same frying pan and add the stalks of the choy sum first and cook for 1 minute. Then add the leaves and return the egg from Step 2.

Add the chilli bean sauce and stir fry for 30 seconds. Add the soy sauce, rice wine and sugar and stir well for 30 seconds. Transfer to a serving dish and sprinkle with the sesame seeds.
