Spicy Tofu Sauce

Just three main ingredients - so quick and easy but so delicious!

Ingredients

Lettuce 1/4
Tofu (firm) 1
Egg 1
Chicken stock 150ml
Soy sauce 2 tbsp
Mirin 2 tbsp
Sake 1 tbsp
Chinese chilli bean sauce 1 tsp
Noodle broth (mentsuyu) 1.5 tbsp
Sesame oil as required
Potato starch in a bit of water as required

Method

Roughly chop the lettuce and fry in sesame oil on high heat. It will shrink so cut into large pieces to start with.

Just before it's fully cooked, add all the sauce ingredients from stock to noodle broth. Thicken the sauce with the potato starch in water.

Add the tofu in the middle and break into 10-12 pieces with the spoon.

After 3 minutes when the tofu is cooked, pour in the beaten egg and turn the heat off, allowing it to cook on residual heat.

When the egg is cooked, transfer to a serving dish.

Tips & Note

You can make this hotter with more chilli bean sauce, if you like.
