Sweet & Sticky Caramelised Butternut Squash

The traditional recipe uses sweet potato but this butternut squash replacement has a reasonable taste and texture that's not so bad.

Ingredients

Butternut squash (medium) 1
Vegetable oil 1 tbsp
Soy sauce 1 tbsp
Salt a pinch
Golden syrup 4-5 tbsp
Sesame seeds as you like
Black sesame seeds as you like

Method

This is the butternut squash, originally from South America, part of the pumpkin family, .

It's very very hard when raw and quite soft when cooked - a typical pumpkin!

Peel then cut the butternut squash into bitesize pieces. Microwave for 6 minutes (500W) to soften.

Put the oil in a frying pan and fry the squash on medium heat for 5-6 minutes. Sprinkle with the salt.

Pour over the soy sauce and golden syrup. Fry for a further 2-3 minutes on medium heat.

This is the golden syrup, it's a sugar syrup.

Transfer the squash onto a serving dish and serve with lots of sesame seeds sprinkled over. Enjoy whilst hot.

Tips & Note

Butternut squash is not as sweet as sweet potato or pumpkin so you'll need to add some sweetness. If you don't have golden syrup, make up a sauce with sugar dissolved in hot water.
