Ingredients

Butternut squash 1/2
Potato (medium) 1
Plain flour 2 tbsp
Parmigiano reggiano (grated) 1 tbsp
Pizza cheese 2 tbsp
Salt & pepper a little

Method

Peel the butternut squash and shred to 5 mm width and 5 cm long pieces. Peel the potato and shred in the same way.

Put Step 1 in a bowl, mix in the flour, add the cheeses and salt & pepper and mix again.

Put some olive oil on medium heat in a frying pan. Scoop a spoonful of the mixture from Step 2 and drop carefully in the oil in a round shape.

Fry one side until firmly cooked, then turn over and fry again until nicely browned all over.

Tips & Note

You need the potato starch in this recipe so don't wash or soak the potato.
