Spicy Beef Stuffed Tomatoes

Ingredients

Minced beef 200g
Tomatoes 6-8
Garlic 1 clove
Olive oil 1 tbsp
Tomato ketchup 2 tbsp
Worcester sauce 2 tbsp
Sugar 1 tsp
Salt & pepper a little
Cheddar cheese (grated) a little
Parsley as required
Lettuce as required
Tabasco as required

Method

Slice off the top 1cm of the tomatoes and hollow them out using a spoon. Finely chop the removed part except the seeds.

Slice off the bottom 2mm of each tomato to make it stable.

Put the olive oil and finely chopped garlic into a frying pan on medium heat. Add the minced beef and fry until separated.

Add the finely chopped tomato from Step 1. Add the ketchup, Worcester sauce, sugar, salt & pepper and stir fry, mixing well.

Stuff the mixture into the tomatoes, sprinkle with the grated cheese and finely chopped parsley and put in a preheated oven (180C) for 30 minutes until the cheese is nicely browned.

Place a baked tomato on top of the shredded lettuce and drizzle with the Tabasco if you like. Enjoy!
