Succulent One Pot Roast Beef

Ingredients

Beef fillet 400-600g
Salt & pepper as required
Garlic 2-3 cloves
Rosemary sprigs 2
Olive oil 1-2 tbsp
Salad vegetables as required

Method

Pierce the beef fillet in several places with a fork.

Season with plenty of salt & pepper, rub thoroughly with the grated garlic, sprinkle with the olive oil and marinate for 1-2 hours with the rosemary.

Heat a frying pan and fry the beef on all 4 sides for 4 minutes each side on medium heat, until the surface starts to burn slightly.

Wrap the beef twice with foil then in a cloth or tea towel and cook on residual heat for at least 30 minutes.

Slice the beef thinly and serve with your favourite salad vegetables.

To make a Balsamic Sauce: add the meat juices from Step 4 to 2 tbsp balsamic vinegar and 1 tbsp honey in a pan and bring to the boil. Simmer and reduce the sauce on low heat until thickened.

To make a Speedy Garlic Sauce: add 1 tbsp olive oil and a grated clove of garlic in a bowl and microwave it for 20 seconds.

Then put 1.5 tbsp mayonnaise into Step 7 and mix well before adding some chopped parsley.
