Cottage Pie

A delicious and warming dish, prefect for a cold autumn evening.

Ingredients

Minced beef 300-400g
Butter as required
Vegetable oil as required
Onion (medium) 1
Carrots 1-2
Garlic 1-2 cloves
Tomato puree 1.5 tbsp
Beef stock 100ml
Red wine 100ml
Worcester sauce 1-2 tbsp
Mashed Potato:
Potatoes 2-3
Butter 2-3 tbsp
Double cream 50-100ml
Salt & pepper as required

Method

Put the butter and oil in a large pan and fry the finely chopped onion until soft and brown.

Add the finely diced carrot and finely chopped garlic and fry.

Add the minced beef and fry until browned. Add the tomato puree and mix well.

Put the red wine in a separate pan and allow the alcohol to evaporate, then add to Step 3.

Add Worcester sauce and stock and simmer for 15 minutes without the lid. Season with salt & pepper.

In the meantime, make the mashed potato: boil the potatoes and drain thoroughly to remove all the water. Mash in a bowl.

Add the butter and cream to the potato and season with salt & pepper.

Transfer Step 5 into an oven dish and top evenly with the mash from Step 7 to cover.

Put in a preheated oven 200C (Gas mark 6) for 10 minutes.

When the top is golden, turn the heat down to 180C (Gas mark 4) for another 30-40 minutes.

Tips & Note

◆When frying the beef, allow the moisture to fry off
◆When covering with the mashed potato, start from the edges first and work to the centre lightly
◆You could add boiled celeriac to the mash for a different flavour
