Carrot & Bacon Pie

Ingredients

Carrots 3
Streaky bacon 3 slices
Rolled puff pastry sheet 1/2
Sour cream 1 tbsp
Grated cheddar cheese 3 tbsp
Coriander powder 1/2 tsp
Egg 1
Salt & pepper as required

Method

Peel the carrots and chop into bitesize pieces. Steam for 10 minutes until just soft.

Put into a food processor. Add the sour cream, coriander powder and salt & pepper and blend to make a paste.

On a baking sheet, spread the puff pastry and lay the 3 slices of bacon over half, leaving 1cm gap on all sides.

Spread the paste from Step 2 on the bacon slices and sprinkle with the cheese.

Fold over the pastry to make a filled pie and use a fork to press down along the open edges.

Brush with beaten egg and put into a preheated oven 180C for 15-20 minutes.

Tips & Note

●Instead of sour cream, you can use double cream.
