Grill bread slices like pizzas, with lots of cheese and any leftover ingredients in the fridge. So quick to make so ideal for lunch or a late evening snack.

Ingredients

Sliced bread 1
Mayonnaise 1 tbsp
Tomato sauce (home made or ready) 1 tbsp
Your favourite toppings as required
Mozzarella cheese for pizza 60-70g
Parmigiano reggiano & parsley (optional) as required
Salt & pepper as required

Method

Lightly toast the bread.

Spread with mayonnaise.

Spread with tomato sauce.

Add your favourite toppings. I used ham and sliced onions.

Transfer to a ovenproof plate and cover the bread with your favourite cheese (I used 4 slices of mozzarella). If you like, sprinkle with Parmigiano reggiano and salt & pepper.

Put into a preheated oven 220C for 6-7 minutes. It's ready to enjoy when the cheese melts and turns nice and brown.

Tips & Note

You won't need to put in the oven for long (6-7 minutes), so it's better to use ready-cooked ingredients in your toppings, as they'll be hidden under the cheese. You can grill it if you like which will be a bit quicker. Add some stronger-tasting cheese if you're using mozzarella, as it won't taste of much otherwise.
