3 Cheese Aubergine roll-ups (Involtini)

You can oven bake or grill this, simply roll up and cook thin slices of aubergine with lots of cheese, it's guaranteed to make you feel good and warm all over.

Ingredients

Aubergine 1 (400g)
Salt & pepper as required
Olive oil as required
Ricotta cheese (or cottage cheese) 200g
Egg 1
Basil leaves 3-4
Lemon zest 1
Parmigiano reggiano 4 tbsp
Tomato sauce (shop bought) 150g
Mozzarella cheese 1
Parsley as required

Method

Thinly slice the aubergine lengthways about 4-5 mm thick.

Place on an oven tray, season with salt & pepper and drizzle with 4 tbsp olive oil. Bake in a preheated oven 220C for 20 minutes.

In the meantime, put the ricotta cheese, egg, lemon zest, 1/2 tsp each salt & pepper and grated parmigiano reggiano in a bowl and mix well.

Allow the aubergines to cool then spread evenly with the mixture from Step 3. Roll upwards very gently.

Put half the tomato sauce on the base of an oven dish then place the aubergine rolls on top, seam side down so they stay rolled.

Pour over the remaining tomato sauce then top each aubergine roll with a slice of mozzarella cheese. Bake at 220C for 30 minutes.

Sprinkle with finely chopped parsley before serving and enjoy whilst hot.

Tips & Note

If you can't find ricotta, use cottage cheese. This has more moisture however, so the rolls might be a bit softer. Instead of baking the aubergine slices in the oven at Step 2, you could pan fry them.
