Ricotta cheese (or cottage cheese) | 200g |
Egg | 1 |
Basil leaves | 3-4 |
Lemon zest | 1 |
Parmigiano reggiano | 4 tbsp |
Tomato sauce (shop bought) | 150g |
Mozzarella cheese | 1 |
Parsley | as required |
If you can't find ricotta, use cottage cheese. This has more moisture however, so the rolls might be a bit softer. Instead of baking the aubergine slices in the oven at Step 2, you could pan fry them.
