Cheese and Bacon Stuffed Bread Roll

Cottage cheese, Parmigiano and Cheddar cheese - all gooey and melted in a bread roll...so yummy!

Ingredients

Bread rolls 2
Bacon rashers 2
Eggs 2
Pepper a pinch
Spring onions 2
Cottage cheese 2 tbsp
Cheddar cheese 4 tbsp
Parmigiano reggiano 2 tbsp
Vegetable oil 1 tbsp

Method

Put the vegetable oil in a frying pan and add the chopped bacon and fry on high heat until very crispy.

Put the eggs, cottage cheese, grated Cheddar and Parmigiano in a bowl with the chopped spring onions and pepper and mix well.

Slice off the top quarter of the bread rolls and remove the inside bread. Tear the removed bread and add to the bowl at Step 2. Flatten the inside of the bread roll.

Add the crispy bacon from Step 1 into the bowl at Step 2 and mix. Stuff the bread rolls with this mixture.

Put in a preheated oven 200C for 15 minutes. Add the bread roll lids in the last 5 minutes.

Tips & Note

You could add double cream instead of cottage cheese if you like, but the filling should not be too runny. The inside of the bread rolls will help to thicken the filling.
