Prawn & Turkey Burgers with Teriyaki Sauce

The prawns add an irresistible texture to the burger!

Ingredients

Turkey mince 100g
Prawns (raw) 150g
Seasonings:
Spring onions (green parts, roughly chopped) 1-2
Ginger (finely chopped) 1 thumb
Roasted sesame seeds 3 tbsp
Egg 1/2
Salt & pepper as required
Sake 1 tbsp
Potato starch 1 tbsp
Sauce:
Light soy sauce 1 tbsp
Sake 1 tbsp
Sugar 1 tbsp
Accompaniments:
Tender stem broccoli 4-5
Parsnip (small) 1
Mushrooms 5-6

Method

Roughly chop the prawns in a large bowl.

Add the turkey mince and all the seasoning ingredients and combine well.

Divide the mixture into two and make into oval patties. Dredge with the potato starch and put in a frying pan with some oil to fry.

Make the accompaniments: add the mushrooms and parsnips in the pan to fry alongside the patties until cooked and browned then remove to a plate.

Lightly boil the broccoli in salted water.

Make the teriyaki sauce: mix all the sauce ingredients together in a bowl. When the patties are cooked through, pour over the sauce, coating thoroughly.

Place the accompaniments and burgers onto serving plates.

Tips & Note

●Keep the prawns fairly chunky so you get a good texture in the burger.
