Izakaya Style Minced Chicken on Lemongrass Skewers

Ingredients

Chicken breast fillet 400g
Spring onions 2
Lime zest a little
Salt a little
Sake 2 tbsp
Breadcrumbs 80g
Egg 1/2
Flour as required
Sauce:
Water 1 cup
Noodle stock (mentsuyu) 3 tbsp
Sake 2 tbsp
Mirin 2 tbsp
Soy sauce 2 tbsp
Potato starch 2-3 tsp
Water a little
Lemongrass 8

Method

1
Put all the ingredients for the chicken kebabs (from the chicken to the egg) in a blender and mix to a paste.

Divide into 8 and mould the mixture around a lemongrass. Dredge with the flour and fry in a frying pan.

Mix all the sauce ingredients together in a bowl. When the chicken is cooked and nicely browned, add the sauce to the pan and simmer for 7-8 minutes on medium heat.

Add the potato starch in water to thicken the sauce before serving

Tips & Note

●When you mould the chicken around the lemongrass at Step 2, rub some oil on your palms to make it easier
●You can use onions instead of spring onions
●The lemongrass gives a lovely flavour to the chicken, it's also edible
