Chicken & Tofu in a Soya Milk Hot Pot

Ingredients

Chicken thighs on the bone 4
Water 1500ml
Sake 2 tbsp
Salt 2 tsp
Soy sauce 2 tsp
Bok choy bulbs 4-6
Carrot 5cm
Mushrooms (shimeji, oyster or shiitake) 100-200g
Silky tofu 500g
Soya milk 200ml

Method

Put the chicken and water in a pan and cook on medium heat. Remove any scum. Add all the seasonings.

Add the bottom part of the chopped bok choy and finely sliced carrot and simmer.

Add the mushrooms, tofu and leafy part of the bok choy.

Add the soya milk and simmer. Don't allow it to boil.

Tips & Note

●The stock comes from the chicken so you can use chicken wings instead of thighs if you prefer
●If you allow it to boil once you add the soya milk, it will separate slightly and won't look so good
