Lemon Roasted Skate & Cherry Tomatoes

So simple and a tasty combination of fish and tomatoes.

Ingredients

Olive oil 2-3 tbsp
Cherry tomatoes 15
Skate 1-2 (500g)
Salt & pepper as required
Lemon juice 1

Method

Put the olive oil and cherry tomatoes in a baking dish. Preheat the oven 190C and roast for 10 minutes.

Remove the thinner edge of the skate (about 5cm).

Season both sides of the rest of the skate with salt & pepper and roast in the tray for 25 minutes.

Drizzle with lemon juice and heat for 1-2 minutes in the oven.

Transfer to a dish and pour over the lemon juice sauce from Step 4. Serve with the roasted tomatoes on the side.

Tips & Note

At Step 1, the tomatoes should split open after 10 minutes.
The discarded part of the fish can be used in another recipe (ID:1745) Crispy Shallow Fried Skate Wings.
