Raspberry & Strawberry Eton Mess with Matcha

Ingredients

Double cream 200ml
Matcha 4g
Sugar 35g
Meringues (ready bought) as required
Raspberries as you like
Strawberries as you like

Method

Add the matcha and sugar to the double cream and whisk to make a matcha cream.

Break the meringue into pieces.

Wash the fruit and pat dry. Keep some aside.

Crush the remaining fruit with the back of a fork. Add some more sugar to your taste, if you need it. This is the sauce.

In a smart dessert glass, put the matcha cream, topped with some of the set aside berries, meringue then the sauce. Garnish with a few whole berries and serve with a teaspoon.

Tips & Note

This is based on Eton Mess using whipped cream, strawberries and meringue. You can adjust as you like, for example using fruit compote, or fruit sauce, or - like this time - making a fruit cream. Choose a good quality matcha to make this really tasty.
