Recipe By: Yukari Elliott (https://cookbuzz.com/kitchen/31)
Serves 7-8 Cook: 25 min

Ingredients

Bramley apple 1
Pear 1
Raisins 3 tbsp
Miso paste 1.5 tbsp
Base:
Vinegar 3 tbsp
Brown sugar 3 tbsp
Coriander seeds (finely crushed) 1 tsp

Method

1
Peel the apple and pear, remove the core and chop randomly.
2
Cut the coriander seeds finely and add.
3
Put Step 1, the raisins and base ingredients in a small pan and fry over a high heat. When moisture comes out, turn the flame down to medium, cover with a lid and cook for about 5 minutes.
4
Mix thoroughly then add the miso and mix again (using a masher if necessary).
5
Turn off the heat when everything is nicely combined.

Tips & Note

●I recommend an apple with sour taste
●If you have persimmon fruit, this will enhance the flavour
●Be sure to cook it thoroughly before chilling in the refrigerator
●If you enjoy cheese on crackers or baguettes, topping with this chutney will enhance a sweet and salty harmony
