Simple Pasta with Onion, Miso & Cheese

Adding a wonderful combination of miso, cheese and onion to pasta makes this dish really tasty.

Ingredients

Pasta 160g
Onion 130g
Butter 20g
Parsley 10g
Cheese 50g
Egg yolk 1
Miso 30g
Mirin 2 tbsp

Method

Start cooking the pasta - use short pasta such as penne.

Finely slice the onion, finely chop the parsley and grate the cheese.

Put the butter in a frying pan on medium heat. Add the onions and fry well.

Add the cooked pasta and 2 tbsp of pasta water and mix well.

Add the cheese. Mix the mirin and miso together in a small bowl and add when the cheese has melted.

Turn the heat off and add the egg yolk and mix well. Add the parsley and mix lightly before serving.
