Cocktail Fruits in Pancetta

Cute appetisers and work well on a BBQ.

Ingredients

Pancetta 1 pack (12 rashers)
Dates (stoned) 4
Nectarine 1/2
Apple 1/2
Watercress as required

Method

Here are the ingredients.

Preheat the oven 200C.

Remove the nectarine stone and cut into quarters. Roll pancetta round the pieces and secure with a cocktail stick.

Remove the core from the apple and cut into quarters. Soak in salted water to stop them turning brown. Wrap with pancetta, as above.

Wrap pancetta around the dates, as above.

Bake in the oven for 10 minutes until the pancetta becomes crispy. Drain the excess oil.

Place on the watercress before serving.

Tips & Note

●If you don't have pancetta, you can use ordinary bacon but this is usually quite thick, so find thin rashers if you can to work better with fruit.
●Make the apple and nectarine slices the same - this will look more attractive when you serve them.
