Breadcrumbed Fennel Cutlet

This is a wonderful way of enjoying fennel.

Ingredients

Fennel bulbs 2
Salt a pinch
Batter:
Strong flour as required
Egg 1
Breadcrumbs as required
Vegetable oif for frying as required

Method

Cut the fennel into 1cm thick slices Season both sides with salt.

Dredge with the strong flour, run through the beaten egg and coat with the breadcrumbs.

Deep fry in 180C hot oil until nice and golden. Serve sprinkled with salt.
