Roast Beetroot Hummus

3 varieties, all so delicious, you'll want to eat them as a dessert!

Ingredients

Raw beetroot 500g peeled
Tinned chickpeas 1 (170g)
Olive oil 5 tbsp
A: Olive oil 1-2 tsp
B: Grated garlic 1 clove
C: Plain yogurt 5-6 tbsp
Pannini as required

Method

Wash the beetroot then cover with foil and put on an oven tray. Roast in the oven 180C for one hour.

Allow to cool then peel and chop into dice.

Blend with the chickpeas and olive oil in a food processor.

Divide into 3. Add the olive oil (A), grated garlic (B) or plain yogurt (C).

Mix each well and serve spread on pannini if you like.

Tips & Note

●Keep in the fridge, it will taste more delicious the next day
