Beautiful Pink Beetroot Soup

This soup has an incredible colour and tastes delicious hot or cold.

Serves 5-6

Ingredients

Beetroot (cooked) 300g
Olive oil as required
Onion 1
Stock 600ml
Salt & pepper as required
Cooked rice 1 small bowl
Double cream a little

Method

Chop the beetroot into small dice.

Put the olive oil in a pan and fry the sliced onions.

When soft, add the beetroot and stock (I used chicken stock this time).

Simmer for 10 minutes then add the cooked rice and simmer further.

Blend and season with salt & pepper, then transfer to a serving bowl.

How to decorate:
Pour the double cream in six or seven blobs around the edge of the bowl.

Using a cocktail stick, drag through the centre of each blob. Go the whole way round to make a complete circle - this will create heart shapes.
