Whole Baby Beetroot & Potato Chips

Taste a whole new side to the beetroot!

Ingredients

Olive oil 4 tbsp
Baby beetroot (uncooked) 800g
New potatoes 800g
Salt 1/3 tsp

Method

Scrub and clean the whole potatoes and beetroot, but keep the skins on. Put in a deep frying pan.

Sprinkle with the salt and coat evenly. Add the olive oil.

Put the lid on and steam cook gently on a low heat, shaking the pan occasionally.

The beetroot should cook in about 30 minutes and the potatoes in about 20 minutes, depending on the size.

Tips & Note

●If you're using larger beetroot, cut into 4 pieces. Try to get the same size of potatoes so that they cook at the same time.
